Southern Fried Potato Salad

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 cups potatoes, diced
  • oil (for frying)
  • salt and pepper
  • 2 -3 hard-boiled eggs, chopped
  • 1 cup chopped celery
  • 1/2 cup relish
  • 1/2 cup chopped green onion
  • 3/4 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes

Recipe

  • 1 fry the potatoes (in batches if necessary) in hot oil until brown and crispy. drain on paper towels and season with salt and pepper.
  • 2 combine remaining ingredients in large bowl.
  • 3 gently fold in warm potatoes and coat with mixture, being careful not to break the potatoes.
  • 4 serve immediately.
