Rosemary Roasted Potatoes

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 10 red potatoes
  • 1 tablespoon rosemary
  • 2 cups broth
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil
  • salt
  • pepper

Recipe

  • 1 cut potatoes into one-inch cubes.
  • 2 parboil the potatoes until just soft.
  • 3 drain the potatoes, then mix them with the rosemary, salt and pepper, tossing to coat.
  • 4 cover the bottom of a glass baking dish with olive oil.
  • 5 add the potatoes and spread them in an even layer on the dish.
  • 6 slowly add the broth to one end of the pan, taking care not to wash the coating off the potatoes.
  • 7 bake in a 350 degree oven for 1 hour. if they are not yet browning and fully soft, continue to cook them for another half hour.
  • 8 serve.
