Roast Potatoes

Ingredients
- Servings: 6
- 2 kg potatoes
- 4 tablespoons olive oil
- 1 teaspoon mixed herbs
- 1 teaspoon salt
Recipe
- 1 preheat oven to 200 c / 400 f gas mark 6.
- 2 place an oven tray into the oven.
- 3 peel and chop potatoes
- 4 place into slightly salted boiled water.
- 5 boil for 5 minutes.
- 6 drain.
- 7 pop back into the pan.
- 8 add the olive oil, herbs and salt.
- 9 put the lid on the pan and shake roughly, the potatoes should be evenly coated and a little bashed.
- 10 put onto the hot oven tray.
- 11 pop into the oven for 40 minutes turning at least twice.
- 12 they should be very crispy!
