Potato Casserole

Ingredients
- Servings: 6
- 8 potatoes, cooked and coarsely mashed
- 1/4 cup unsalted butter
- 2 cups shredded cheddar cheese
- 1 teaspoon salt substitute
- 1/3 cup chopped chives
- 16 fluid ounces sour cream
- 1/8 teaspoon pepper
Recipe
- 1 melt the butter and cheese in a saucepan.
- 2 remove from the heat and add the sour cream, chives, salt and pepper.
- 3 fold into the mashed potatoes and place in a greased casserole dish.
- 4 cover and bake at 325°f for 25 minutes.
- 5 uncover, sprinkle more grated cheese on top, and return to the oven just until cheese is melted.
