Potato Casserole

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 8 potatoes, cooked and coarsely mashed
  • 1/4 cup unsalted butter
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt substitute
  • 1/3 cup chopped chives
  • 16 fluid ounces sour cream
  • 1/8 teaspoon pepper

Recipe

  • 1 melt the butter and cheese in a saucepan.
  • 2 remove from the heat and add the sour cream, chives, salt and pepper.
  • 3 fold into the mashed potatoes and place in a greased casserole dish.
  • 4 cover and bake at 325°f for 25 minutes.
  • 5 uncover, sprinkle more grated cheese on top, and return to the oven just until cheese is melted.
