Potato Candy

Ingredients
- 1 potato
- 2 1/2 lbs powdered sugar
- 1 1/2 cups creamy peanut butter
Recipe
- 1 peel and quarter potato; boil until tender.
- 2 drain and place in a medium size mixing bowl; mash with a fork until smooth and creamy.
- 3 stir in powdered sugar, one cup at a time, until a firm dough is formed.
- 4 turn dough onto surface dusted with powdered sugar; roll to a 1/4 inches thick rectangle.
- 5 spread peanut butter evenly over surface; roll lengthwise into a log.
- 6 slice into 3/4 inches pieces.
