Potato Candy

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1 potato
  • 2 1/2 lbs powdered sugar
  • 1 1/2 cups creamy peanut butter

Recipe

  • 1 peel and quarter potato; boil until tender.
  • 2 drain and place in a medium size mixing bowl; mash with a fork until smooth and creamy.
  • 3 stir in powdered sugar, one cup at a time, until a firm dough is formed.
  • 4 turn dough onto surface dusted with powdered sugar; roll to a 1/4 inches thick rectangle.
  • 5 spread peanut butter evenly over surface; roll lengthwise into a log.
  • 6 slice into 3/4 inches pieces.
