Potato Bake

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 4 potatoes, peeled & grated
  • 1 tablespoon parsley flakes
  • 3 eggs
  • 60 g butter, melted
  • 1 onion, finely chopped
  • 1/3 cup plain flour
  • salt
  • pepper

Recipe

  • 1 drain off as much liquid as possible from potatoes, then toss with the onion, parsley and flour.
  • 2 beat eggs with a little salt & pepper and then add to potato along with the melted butter and mix to combine.
  • 3 pour into a well greased casserole dish and bake at 200.c for approx 10 minutes.
  • 4 reduce heat to 180.c and cook for a further 30 mins or until golden & set.
