Potato Bake

Ingredients
- Servings: 6
- 4 potatoes, peeled & grated
- 1 tablespoon parsley flakes
- 3 eggs
- 60 g butter, melted
- 1 onion, finely chopped
- 1/3 cup plain flour
- salt
- pepper
Recipe
- 1 drain off as much liquid as possible from potatoes, then toss with the onion, parsley and flour.
- 2 beat eggs with a little salt & pepper and then add to potato along with the melted butter and mix to combine.
- 3 pour into a well greased casserole dish and bake at 200.c for approx 10 minutes.
- 4 reduce heat to 180.c and cook for a further 30 mins or until golden & set.
