Mountain Man Breakfast

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 8
  • 1/2 lb bacon, cut into small pieces
  • 1 medium onion, chopped
  • 1 (32 ounce) bag frozen hash brown potatoes
  • 12 eggs, beaten
  • salt & pepper
  • 1 lb cheddar cheese, grated
  • 8 ounces salsa

Recipe

  • 1 fry bacon and onion together.
  • 2 remove bacon and onion and drain on paper towels.
  • 3 wipe excess grease out of dutch oven.
  • 4 fry hash brown potatoes.
  • 5 add onions and bacon.
  • 6 pour beaten eggs over mixture, cover and cook until almost solid.
  • 7 season to taste.
  • 8 sprinkle with grated cheese.
  • 9 cover until cheese is melted.
  • 10 serve with salsa.
