Mountain Man Breakfast

Ingredients
- Servings: 8
- 1/2 lb bacon, cut into small pieces
- 1 medium onion, chopped
- 1 (32 ounce) bag frozen hash brown potatoes
- 12 eggs, beaten
- salt & pepper
- 1 lb cheddar cheese, grated
- 8 ounces salsa
Recipe
- 1 fry bacon and onion together.
- 2 remove bacon and onion and drain on paper towels.
- 3 wipe excess grease out of dutch oven.
- 4 fry hash brown potatoes.
- 5 add onions and bacon.
- 6 pour beaten eggs over mixture, cover and cook until almost solid.
- 7 season to taste.
- 8 sprinkle with grated cheese.
- 9 cover until cheese is melted.
- 10 serve with salsa.
