Mini Frittatas - The "special Occasion" Method

Ingredients
- Servings: 12
- 4 brown eggs, lightly beaten
- 1 cup cream
- 1/4 teaspoon nutmeg
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/2 cup sausage, ground and cooked
- 1/2 cup potato, shredded and cooked
- 1/4 cup gruyere cheese, shredded
Recipe
- 1 spray 2 mini muffin tins with non-stick cooking spray.
- 2 fill each one liberally with pinches of the filling ingredients.
- 3 typically for a holiday, i make several varieties besides the sausage & potato. you can substitute the filling ingredients above with some of the following options or your own creation:.
- 4 *smoked salmon, chive, & onion.
- 5 *ham & swiss.
- 6 *crab, potato, & bell pepper.
- 7 *bacon & cheddar.
- 8 *spinach, mushroom, and onion.
- 9 *tomato, ricotta, & pancetta.
- 10 *green chili, scallion, monterrey jack.
- 11 whisk together the custard ingredients in a large measuring cup (or a bowl with a pouring spout).
- 12 pour some custard in each full muffin tin very carefully. you want to fill each one to the top but do not over fill or your pan will be a mess -- and they won't look as pretty for guests.
- 13 carefully place the muffin tins in a 350 degree oven. bake for about 35-45 minutes -- until cooked through and golden brown on top.
- 14 serve to your guests family style or individually. i like to garnish with some fresh herbs or a touch of a cheese sauce. fresh chopped sage goes well with the potato & sausage filling.
- 15 note1: my measurements may be slightly off and will vary depending on how much you want to fill each muffin tin. be prepared to need a little more or less of the custard or filling.
- 16 note2: i usually make these every christmas for my family brunch. i find that prepping all ingredients (except custard) in advance helps on christmas morning. my son loves to help me fill the muffin tins!
