Maple Veggie Mashed Potatoes

Ingredients
- 2 quarts water
- 1/2 lb turnip, peeled and cut into 1-inch cubes
- 5 -6 medium yukon gold potatoes, cut into 1-inch cubes
- 1/4 medium cauliflower head, cut into 1-inch cubes
- 2 teaspoons olive oil
- 1 tablespoon maple syrup
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup unsweetened soymilk
Recipe
- 1 fill a large saucepan with 2 qt of water. bring to a boil. add turnips, reduce heat to medium and cook for 15 minutes. add potatoes, return to simmer and cook another 5 minutes. add cauliflower and cook for another 15 minutes or until all vegetables are tender.
- 2 drain vegetables and mash. while mashing add olive oil, maple syrup, salt, and pepper.
- 3 heat soymilk in microwave until hot and pour into vegetable mixture and continue to mash.
