Maple Veggie Mashed Potatoes

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • 2 quarts water
  • 1/2 lb turnip, peeled and cut into 1-inch cubes
  • 5 -6 medium yukon gold potatoes, cut into 1-inch cubes
  • 1/4 medium cauliflower head, cut into 1-inch cubes
  • 2 teaspoons olive oil
  • 1 tablespoon maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsweetened soymilk

Recipe

  • 1 fill a large saucepan with 2 qt of water. bring to a boil. add turnips, reduce heat to medium and cook for 15 minutes. add potatoes, return to simmer and cook another 5 minutes. add cauliflower and cook for another 15 minutes or until all vegetables are tender.
  • 2 drain vegetables and mash. while mashing add olive oil, maple syrup, salt, and pepper.
  • 3 heat soymilk in microwave until hot and pour into vegetable mixture and continue to mash.
