Kurt's Potato Latkes

Total Time: 1 hr 30 mins Preparation Time: 1 hr Cook Time: 30 mins

Ingredients

  • 5 medium potatoes
  • 1 medium onion
  • 1 egg, beaten
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • oil

Recipe

  • 1 peel potatoes; keep in cold water till ready to use.
  • 2 shred onion on large holes of grater.
  • 3 shred potatoes on small holes.
  • 4 drain potatoes/onions in colander, pressing out excess liquid.
  • 5 place in large mixing bowl, stir together with egg, flour, salt and pepper in 10â€? skillet heat about 1â€? of cooking oil.
  • 6 drop in about 1t of mixture at a time for each latke.
  • 7 cook over med heat till golden brown.
  • 8 drain on paper towels (makes about 30 latkes).
