Ingredients
- Servings: 4
- 500 g potatoes, cubed
- 1 tablespoon olive oil
- 2 garlic cloves, chopped
- 425 g tomatoes
- 2 tablespoons fresh oregano, chopped
- 1/4 teaspoon ground black pepper
Recipe
- 1 cook potatoes in boiling water until tender but not soft, drain.
- 2 heat oil in a saucepan and cook garlic until golden, add tomatoes, including liquid from can and oregano, simmer until thickened. season with pepper.
- 3 arrange potatoes in a warmed serving dish & top with tomato sauce.
