Italian Potatoes

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 500 g potatoes, cubed
  • 1 tablespoon olive oil
  • 2 garlic cloves, chopped
  • 425 g tomatoes
  • 2 tablespoons fresh oregano, chopped
  • 1/4 teaspoon ground black pepper

Recipe

  • 1 cook potatoes in boiling water until tender but not soft, drain.
  • 2 heat oil in a saucepan and cook garlic until golden, add tomatoes, including liquid from can and oregano, simmer until thickened. season with pepper.
  • 3 arrange potatoes in a warmed serving dish & top with tomato sauce.
