Sweet Potatoes From The Carolinas

Ingredients
- Servings: 4
- 1 tablespoon olive oil
- 12 dry shallots, peeled
- 4 sweet potatoes, peeled and cubed
- 1 tablespoon fresh parsley, chopped
- salt and black pepper
Recipe
- 1 heat oil in saucepan over medium heat.
- 2 add shallots and sweet potatoes.
- 3 season well.
- 4 cover and cook for 18 to 30 minutes, stirring 3 to 4 times.
- 5 when vegetables are cooked sprinkle with parsley.
- 6 serve.
- 7 note:the sweet potatoes will stick to the bottom of the saucepan if not stirred frequently.
