Lentils And Bacon

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 2 1/4 cups lentils, washed and cleaned
  • 6 cups water
  • 1 lb thick slab bacon, cut in 1 inch pieces
  • 3 potatoes, peeled and cut into 1/2 in cubes
  • 1/2 cup vinegar
  • 1/4 cup sugar
  • salt
  • 2 tablespoons butter
  • 2 onions, chopped
  • 2 tablespoons parsley

Recipe

  • 1 combine lentils,water and bacon in a large heavy saucepan .
  • 2 bring to a boil, then reduce heat.
  • 3 cover and simmer for 45 minutes.
  • 4 add potatoes and continue to cook until lentils are tender about 15 minutes.
  • 5 stir in vinegar and sugar.
  • 6 taste and add salt if needed.
  • 7 place in serving dish and keep warm.
  • 8 melt butter in skillet ;saute onions and parsley over medium heat until onions are transparent.
  • 9 spoon over lentils.
  • 10 serve hot.
