Lentils And Bacon

Ingredients

- 2 1/4 cups lentils, washed and cleaned
- 6 cups water
- 1 lb thick slab bacon, cut in 1 inch pieces
- 3 potatoes, peeled and cut into 1/2 in cubes
- 1/2 cup vinegar
- 1/4 cup sugar
- salt
- 2 tablespoons butter
- 2 onions, chopped
- 2 tablespoons parsley
Recipe
- 1 combine lentils,water and bacon in a large heavy saucepan .
- 2 bring to a boil, then reduce heat.
- 3 cover and simmer for 45 minutes.
- 4 add potatoes and continue to cook until lentils are tender about 15 minutes.
- 5 stir in vinegar and sugar.
- 6 taste and add salt if needed.
- 7 place in serving dish and keep warm.
- 8 melt butter in skillet ;saute onions and parsley over medium heat until onions are transparent.
- 9 spoon over lentils.
- 10 serve hot.
