Scalloped Potatoes

Ingredients
- 6 -8 large potatoes, peeled and sliced thin
- 1 large onion, finely chopped
- 1 green bell pepper, finely chopped
- 10 -12 saltine crackers, crushed
- 1/4 cup butter or 1/4 cup margarine, cut into chunk
- salt
- pepper
- 4 cups whole milk
- 4 slices raw bacon
Recipe
- 1 in a casserole dish layer the ingredients, using some of each ingredient except the milk and bacon,. repeat these steps until your dish is full to within 1 inch of the top. once full pour milk over all until just covering the potatoes. place bacon strips across the top of the potatoes.
- 2 place on middle oven rack and bake at 350 degrees for 1 hour.
- 3 place a pan or foil on the bottom of the oven in case of boil over.
- 4 let stand for 10 minutes before serving to allow potatoes to thicken a little more before serving.
