Spinach Whipped Potatoes

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 6 medium baking potatoes, peeled and quartered
  • 2 teaspoons salt
  • 4 ounces cream cheese (or more, to taste)
  • 4 tablespoons butter (or more, to taste)
  • 1/4 cup milk
  • 1 (14 ounce) package frozen chopped spinach, thawed and squeezed dry
  • salt and pepper

Recipe

  • 1 place peeled, quartered potatoes in a large saucepan.
  • 2 cover with cool water and add salt.
  • 3 bring to a boil over high heat.
  • 4 turn down to medium-high heat and cook until tender, about 20 minutes.
  • 5 drain potatoes well and return to saucepan.
  • 6 mash the potatoes with an electric mixer.
  • 7 add the cream cheese, butter, milk and whip with an electric mixer until smooth.
  • 8 stir in the chopped spinach, salt and pepper.
