Spinach Whipped Potatoes

Ingredients

- 6 medium baking potatoes, peeled and quartered
- 2 teaspoons salt
- 4 ounces cream cheese (or more, to taste)
- 4 tablespoons butter (or more, to taste)
- 1/4 cup milk
- 1 (14 ounce) package frozen chopped spinach, thawed and squeezed dry
- salt and pepper
Recipe
- 1 place peeled, quartered potatoes in a large saucepan.
- 2 cover with cool water and add salt.
- 3 bring to a boil over high heat.
- 4 turn down to medium-high heat and cook until tender, about 20 minutes.
- 5 drain potatoes well and return to saucepan.
- 6 mash the potatoes with an electric mixer.
- 7 add the cream cheese, butter, milk and whip with an electric mixer until smooth.
- 8 stir in the chopped spinach, salt and pepper.
