Sweet Potato Soufflé

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 4 sweet potatoes
  • 1 egg
  • 1 teaspoon vanilla
  • 1/4 cup margarine
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 cup melted margarine
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup flour

Recipe

  • 1 boil sweet potatoes until tender. when cool enough, remove skin. beat sweet potatoes with electric mixer in bowl until creamy. add egg, vanilla, margarine, sugar and cinnamon. place in glass 9x11 baking dish. cover with aluminum foil and refrigerate over night. combine remaining ingredients for topping and place on top of sweet potatoes. bake at 350 degrees for 30 minutes.
