Sweet Potato Pudding

Ingredients

• Servings: 4
• 1 2/3 cups flour
• 1 1/3 cups sugar
• 1 teaspoon baking soda
• 1/4 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 teaspoon cinnamon
• 1/2 teaspoon allspice
• 1/4 teaspoon clove
• 1/2 cup butter
• 1 cup sweet potato, cooked
• 1/3 cup water
• 1 large egg

Recipe

• 1 sift all dry ingredients together in mixing bowl.
• 2 mash the potato and add to the bowl with butter and water.
• 3 with an electric mixer, beat the mixture 2 minutes.
• 4 add the egg and beat another 2 minutes.
• 5 place batter in a greased 8" square cake pan.
• 6 bake at 350 for 40 minutes.
