Tuna Cakes In A Muffin Pan

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 lbs potatoes, peeled (raw weight)
  • 1/3 lb tuna
  • 1/3 cup water
  • 1 bunch spring onion, finely chopped
  • 1/4 cup mayonnaise
  • 1/2 cup ricotta cheese
  • 1/4 cup fish sauce
  • 1/4 teaspoon old bay seasoning
  • fresh ground black pepper, to taste
  • 2 eggs, beaten
  • 1/2 cup mozzarella cheese, grated

Recipe

  • 1 boil or microwave potatoes til soft and mash. leave to cool til warm.
  • 2 boil tuna in the water til cooked through. flake fish and add with the water to potatoes.
  • 3 add spring onion, mayonnaise, ricotta cheese, fish sauce, old bay and pepper and mix well together.
  • 4 mix in beaten eggs. this will make the mixture very soft.
  • 5 spoon into a greased muffin pan, filling to the top.
  • 6 spinkle mozzarella cheese on top with a light sprinkling of old bay.
  • 7 bake at 180c for 30 minutes.
  • 8 leave to cool in muffin pan for 10 minutes so that the fish cakes can firm up a bit.
