Tuna Cakes In A Muffin Pan

Ingredients
- 1 1/2 lbs potatoes, peeled (raw weight)
- 1/3 lb tuna
- 1/3 cup water
- 1 bunch spring onion, finely chopped
- 1/4 cup mayonnaise
- 1/2 cup ricotta cheese
- 1/4 cup fish sauce
- 1/4 teaspoon old bay seasoning
- fresh ground black pepper, to taste
- 2 eggs, beaten
- 1/2 cup mozzarella cheese, grated
Recipe
- 1 boil or microwave potatoes til soft and mash. leave to cool til warm.
- 2 boil tuna in the water til cooked through. flake fish and add with the water to potatoes.
- 3 add spring onion, mayonnaise, ricotta cheese, fish sauce, old bay and pepper and mix well together.
- 4 mix in beaten eggs. this will make the mixture very soft.
- 5 spoon into a greased muffin pan, filling to the top.
- 6 spinkle mozzarella cheese on top with a light sprinkling of old bay.
- 7 bake at 180c for 30 minutes.
- 8 leave to cool in muffin pan for 10 minutes so that the fish cakes can firm up a bit.
