Pesto Potatoes

- 2 lbs tiny new potatoes
- 1/2 cup fresh basil
- 2 tablespoons pine nuts
- 1/2 cup olive oil
- 3/4 cup parmesan cheese
- salt and pepper
Recipe
- 1 cook the potatoes in a saucepan of boiling salted water for 15 minutes or until tender. drain well and transfer to a serving dish.
- 2 meanwhile, put the basil, pine nuts, garlic and a little salt and pepper in a food processor (the blender works too). process for 30 seconds, adding the oil slowly, until smooth.
- 3 remove the mixture from the food processor and place in a mixing bowl. stir in the cheese. spoon the pesto over the potatoes and mix well.
