Pesto Potatoes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 lbs tiny new potatoes
  • 1/2 cup fresh basil
  • 2 tablespoons pine nuts
  • 1/2 cup olive oil
  • 3/4 cup parmesan cheese
  • salt and pepper

Recipe

  • 1 cook the potatoes in a saucepan of boiling salted water for 15 minutes or until tender. drain well and transfer to a serving dish.
  • 2 meanwhile, put the basil, pine nuts, garlic and a little salt and pepper in a food processor (the blender works too). process for 30 seconds, adding the oil slowly, until smooth.
  • 3 remove the mixture from the food processor and place in a mixing bowl. stir in the cheese. spoon the pesto over the potatoes and mix well.
