Potato Veggie Burgers

Total Time: 37 mins Preparation Time: 29 mins Cook Time: 8 mins

Ingredients

  • Servings: 8
  • 1 (15 ounce) can black beans, rinsed and drained
  • 3 new potatoes
  • 3 carrots, grated
  • 1/2 onion, dived
  • 4 scallions, chopped
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/4 teaspoon cayenne
  • salt and pepper, to taste
  • cooking oil

Recipe

  • 1 microwave potatoes until done, let cool. mash the potatoes and black beans together. add the remaining ingredients, except the oil and mix until combined.
  • 2 shape into patties. heat about 2 tablespoons of olive oil and cook each patty until they are done, about 3 minutes per side.
