Sweet Potato Pone Aka Potato Pound Of Belize

Ingredients
- 2 lbs sweet potatoes, peeled and grated
- 4 ounces gingerroot, grated
- 1 cup raisins
- 1 teaspoon cinnamon or 1 teaspoon nutmeg
- 2 cups brown sugar
- 2 teaspoons pure vanilla extract
- 4 cups coconut milk
- 2 tablespoons butter, melted
Recipe
- 1 grease a 9x13 pyrex dish.
- 2 preheat oven to 450.
- 3 wash, peel, and grate sweet potatoes.
- 4 in large bowl, combine sweet potatoes, ginger, raisins, cinnamon, sugar and vanilla.
- 5 mix well.
- 6 add milk and butter; stirring to incorporate throughout mixture.
- 7 pour into pyrex dish.
- 8 bake on the bottom shelf of your oven for 30 minutes.
- 9 lower oven temperature to 350.
- 10 move dish to top shelf.
- 11 cook for an additional hour until top is brown, knife comes out clean.
- 12 the top will look very sticky.
