Potato Stuffed Portobellos #5fix

Ingredients
- 4 large portabella mushroom caps (stems removed)
- 2 cups simply potatoes traditional mashed potatoes
- 1/2 cup grated parmesan cheese
- 1 tablespoon chopped fresh rosemary
- 1 teaspoon minced fresh garlic
Recipe
- 1 use a damp cloth to remove any dirt from mushrooms. do not wash mushrooms!
- 2 drain any liquid from package of mashed potatoes. in a bowl, mix potatoes, garlic, 2/3 of cheese, and 2/3 of rosemary. top the inside of each mushroom with 1/4 of potato mixture, spreading almost to the edge of the cap. use a fork to create ridges on top of potatoes. sprinkle remaining rosemary and parmesan cheese on top of potato.
- 3 place filled mushrooms, potato side up, in a baking dish and bake at 425 degrees for 30 minutes or until golden brown on top.
