Sweet Potato Spread

Ingredients
- 2 cups diced sweet potatoes
- 3 cups water
- 1/4 cup unsalted butter, at room temperature and diced
- 1/8 teaspoon ground cinnamon
Recipe
- 1 in a large saucepan over medium heat, bring sweet potato and water to a boil. reduce heat and boil gently until soft, about 5 minutes.
- 2 drain. using a hand mixer, add butter and cinnamon and whip until smooth.
- 3 cover and refrigerate up to 3 days.
- 4 variation: before serving, drizzle the top with maple syrup.
