Sweet Potato Souffle (casserole)

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 3 cups sweet potatoes (baked, peeled and mashed)
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1/4 cup margarine
  • 1/2 cup sweetened condensed milk
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon butter flavoring
  • 1 teaspoon sherry flavoring
  • 1/3 cup margarine, melted
  • 1 cup light brown sugar
  • 1 cup pecans, chopped
  • 1/2 cup flour

Recipe

  • 1 place mashed potatoes in a bowl. beat eggs and add to potatoes. add the sugar, salt, 1/3 stick margarine, sweetened condensed milk, vanilla, cinnamon, nutmeg, butter & sherry flavorings and beat on low speed until well blended and combined. pour into buttered baking dish.
  • 2 for topping:.
  • 3 mix remaining ingredients together except margarine. pour the topping over potatoes, then pour the melted margarine over the topping. bake 40 minutes in preheated 350 degree oven.
