Potato Temptation

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 25 g butter
  • 750 g potatoes
  • 1 large onion, thinly sliced
  • fresh ground pepper
  • 1 cup single cream
  • 1 tablespoon chopped fresh thyme
  • 1 vegetable stock cube, dissolved in
  • 2 tablespoons water

Recipe

  • 1 heat oven to 200 degrees celsius butter an oven proof dish about 20 x 30cm in size.
  • 2 cut the potatoes into matchstick size about 1/2 -1cm thick.
  • 3 in a bowl, toss the potatoes with the very thinly sliced onions, add the cream, the dissolved stock cube, thyme, salt and pepper to taste. place in the buttered ovenproof dish.
  • 4 sprinkle some extra thyme, and coarsely ground pepper on top and bake for about 45 minutes, until the potatoes are soft and the top is crisp.
  • 5 ** place under a hot grill to crisp up and brown if they are still pale on top.
