Potato Temptation

Ingredients

- 25 g butter
- 750 g potatoes
- 1 large onion, thinly sliced
- fresh ground pepper
- 1 cup single cream
- 1 tablespoon chopped fresh thyme
- 1 vegetable stock cube, dissolved in
- 2 tablespoons water
Recipe
- 1 heat oven to 200 degrees celsius butter an oven proof dish about 20 x 30cm in size.
- 2 cut the potatoes into matchstick size about 1/2 -1cm thick.
- 3 in a bowl, toss the potatoes with the very thinly sliced onions, add the cream, the dissolved stock cube, thyme, salt and pepper to taste. place in the buttered ovenproof dish.
- 4 sprinkle some extra thyme, and coarsely ground pepper on top and bake for about 45 minutes, until the potatoes are soft and the top is crisp.
- 5 ** place under a hot grill to crisp up and brown if they are still pale on top.
