Orange Spiced Sweet Potatoes

Ingredients

• 1 lb sweet potato
• 3/4 cup orange juice
• 1/2 cup firmly packed brown sugar
• 1 tablespoon margarine
• 2 tablespoons orange zest
• 1 teaspoon cinnamon
• 1/4 teaspoon fresh grated nutmeg

Recipe

• 1 heat oven to 350 degrees.
• 2 slice potatoes about 1/8 inch thick; spread evenly in a 8 inch square dish.
• 3 combine orange juice,brown sugar margarine, orange peel, cinnamon and nutmeg.
• 4 cover dish with foil or lid.
• 5 bake 1 hour, until potatoes are tender.
