Scalloped Potato Pie

Ingredients

  • Servings: 8
  • 2 ready-made pie crusts (or your own two crust pie crust recipe, prepared)
  • 5 medium potatoes
  • 1/3 cup butter
  • 1/2 cup thinly sliced green onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon dry mustard
  • 3 tablespoons flour
  • 1 1/2 cups half-and-half or 1 1/2 cups whole milk
  • 1 cup shredded sharp cheddar cheese

Recipe

  • 1 heat oven to 375*f.
  • 2 peel potatoes.
  • 3 thinly slice them to make 4 cups.
  • 4 cover with water.
  • 5 melt butter, saute onions in this.
  • 6 stir in salt, pepper, dry mustard, and flour until blended.
  • 7 stir in half and half or milk and cook, stirring constantly, over medium heat until thickened.
  • 8 stir and boil one minute.
  • 9 remove from heat.
  • 10 line a 9 inch pie tin with paastry.
  • 11 drain potatoes.
  • 12 pat dry.
  • 13 using 1/3 each, layer potatoes, cheese and sauce in crust.
  • 14 repeat layers twice.
  • 15 cover with top crust.
  • 16 flue edge and vent top.
  • 17 glaze with a little milk or beaten egg yolk if desired.
  • 18 cover edge with foil.
  • 19 bake 25 minutes.
  • 20 remove foil and bake 30 to 35 minutes longer.
