Mushroom Stuffed Potato

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 10
  • 10 large baking potatoes
  • 12 ounces canned mushrooms, drained well
  • 8 tablespoons butter
  • 2 cups sour cream
  • 2 cups shredded cheddar cheese
  • 2 cups shredded monterey jack cheese
  • granulated garlic

Recipe

  • 1 bake potatoes in a 350f oven for about 2 hours or until cooked.
  • 2 cool potatoes until cool enough not to burn yourself.
  • 3 slice a thin layer off the top of potato and scoop out potatoes leaving a thin layer of potato in shell.
  • 4 mix the rest of ingredients together using granulated garlic amount to taste and over stuff the potato filling into each shell.
  • 5 sprinkle shredded cheese on top and bake around 30 minutes until cheese is melted on top.

Potato Wedges With Lemon Chilli Sour Cream

  • 6 potatoes, washed and cut into wedges
  • 3 tablespoons oil
  • 2 -3 teaspoons lemon pepper seasoning
  • 1/2 teaspoon chili powder
  • 1 lemon, juice of
  • 250 g low-fat sour cream
  • 1 teaspoon grated lemon rind
  • 1 teaspoon chili powder

Recipe

  • 1 pour oil into a baking dish, add potatoes and toss to coat.
  • 2 sprinkle over lemon pepper and chili powder and bake at 200°c for 30 minutes or until tender and browned turning frequently during cooking.
  • 3 squeeze lemon juice over potatoes before serving and toss to coat, serve with lemon chili sour cream.
  • 4 to make sour cream mix: combine all ingredients, mix well & let sit for a few minutes for flavours to combine.

Steak And Onion In A Jacket

Ingredients

  • 2 baking potatoes, scrubbed
  • 1 tablespoon vegetable oil
  • 2 large onions, sliced
  • 6 -8 ounces rump steak, cut into slices
  • 1 teaspoon dijon mustard
  • 4 tablespoons red wine
  • salt & freshly ground black pepper
  • parsley, to garnish

Recipe

  • 1 preheat the oven to 400°f.
  • 2 scrub the potatoes and place in the oven.
  • 3 after the potatoes have been cooking for 45 minutes heat the oil in a frying pan and gently fry the onions until golden brown and soft (this should take about 15 minutes).
  • 4 increase the heat, add the steak and fry for 3-4 minutes or until cooked.
  • 5 stir in the mustard, wine and seasoning, and continue cooking for 1 minute.
  • 6 when the potatoes are cooked cut them in half lengthways and spoon in the steak and onion filling. serve immediately garnished with freshly chopped parsley.

Potato Waffles Spiked With Cinnamon And Apples #sp5

  • 2 cups simply potatoes traditional mashed potatoes
  • 1/2 cup cinnamon applesauce
  • 1 extra large egg
  • 2 tablespoons flour
  • 3/4 teaspoon baking powder

Recipe

  • 1 mix above ingredients. let rest as you heat the waffle iron. (i used a 4 square non-stick waffle maker).
  • 2 once waffle iron is hot, spread 1/4 of the batter of the batter evenly across each waffle mold. close and cook for 10 minutes or until brown and until they lift out easily (every iron is different, so start checking at 7 minutes and then once again every 2 minutes).

Potato Vegetable Samosas (india)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 3/4 cup warm water
  • 2 1/2 cups peeled and diced yukon gold potatoes, cut into 1/2-inch pieces
  • 1 tablespoon fennel seed
  • 1 tablespoon cumin seed
  • 2 teaspoons coriander seeds
  • 3 tablespoons vegetable oil
  • 1/2 cup onion, finely diced
  • 2 garlic cloves, minced
  • 1 inch fresh ginger, peeled and grated
  • 1 lb frozen chopped spinach, thawed and excess juices squeezed out
  • 1/2 cup frozen peas, thawed
  • salt and pepper
  • vegetable oil (for frying)

Recipe

  • 1 for dough, combine flour and salt. stir in oil, then stir in warm water. turn dough out onto a lightly floured worksurface and knead until dough is elastic, about 5 minutes.
  • 2 cover and set aside while preparing filling.
  • 3 filling:.
  • 4 boil potatoes uncovered in salted water until tender, then drain well and set aside.
  • 5 in a large sauté pan, toast fennel, cumin and coriander seeds for 2 minutes (until a fragrance is noticeable). add oil, then onion and sauté for 4 minutes, until onion is translucent. add garlic and ginger and sauté one minute more. stir in spinach, peas and cooked potatoes, mashing lightly to combine and warm, then season to taste. let filling cool.
  • 6 to assemble samosas, divide dough into 12 equal portions and shape each portion into a ball. on a lightly floured surface,roll out 1 ball into a 6-inch circle. cut circle in half. fold 1 corner of semicircle up and over middle. fold second corner over to make triangle, and pinch corners of triangle to seal (leave rounded side open). hold triangle in your hand with open rounded side facing up and let dough fall open to make cone. fill cone with approximately 2 tablespoons potato mixture, then pinch along rounded side to seal.
  • 7 repeat with remaining dough and filling. cover and chill samosas until ready to cook.
  • 8 fill a pot with 2-inches of oil (make sure oil fills pot not more than halfway) and heat to 350°f with tongs, place samosas in oil, leaving an inch between them, and cook until golden brown, about 4 minutes. turn over and cook other side until brown, then remove onto a paper-towel lined plate to drain.
  • 9 samosas can be served warm or at room temperature with mango chutney.
  • 10 tip: alternately, the samosa can be brushed with an eggwash and baked at 375 °f on a parchment-lined baking tray for 30 minutes.

Potato Stromboli

Ingredients

  • 2 large potatoes
  • 1 garlic clove, crushed
  • 1 medium onion, diced
  • 2 eggs, beaten
  • salt and pepper
  • 1 lb pizza dough, raised
  • 1 tablespoon olive oil

Recipe

  • 1 boil potatoes with skin on, for 15 minutes, or until fork goes through easily (but potato is not mushy). let potatoes cool for a few minutes, peel skin, then cut potatoes in small chunks.
  • 2 heat olive oil in large pan, add garlic and onions. stir for 5 minutes, then add potatoes, seasoning with salt and pepper. let potatoes brown a bit (5 minutes or so), then add eggs. stir eggs in quickly and remove pan from heat once eggs are cooked. let cool for a few minutes.
  • 3 punch down pizza dough. roll out to 8" x 12" or so.
  • 4 spoon potato mixture on dough, spreading to within 1" on each side. roll up dough from 12" side, jelly-roll fashion, tucking in sides. pinch dough together to hold in ingredients. place seam side down on parchment paper on baking pan, and bake at 375 degrees for 20 minutes.
  • 5 cut into one inch pieces.

Party Mashed Potatoes

  • 8 -10 medium baking potatoes, peeled and quartered
  • 1 (8 ounce) package cream cheese, softened
  • 1 (8 ounce) carton sour cream
  • garlic salt, to taste
  • chives, to taste
  • parsley flakes, to taste
  • 1 -2 tablespoon butter, melted
  • paprika, enough to cover the top of the casserole dish

Recipe

  • 1 cook potato, covered, in boiling water to cover for 15 minutes or until tender. drain well; mash the potato in a medium mixing bowl.
  • 2 add the cream cheese, sour cream, garlic salt, chives, and parsley. beat at a medium speed of an electric mixer until smooth.
  • 3 spoon the potato mixture into a 1 1/2 quart casserole; brush with the melted butter and sprinkle with paprika.
  • 4 bake at 350 degrees for 30 minutes.

  • 1 place potatoes in large pot and cover with water. bring to a boil. cook until potatoes are fork tender, about 20 minutes. drain.

  • 1 tablespoon grated cheddar cheese or 1 tablespoon grated parmesan cheese

  • 1 dash celery seeds (not celery salt) or 1 dash dried parsley

Recipe

  • 1 place the prepared instant mashed potatoes in a bowl.
  • 2 stir in the remaining ingredients. for creamier consistency, add more yogurt.

Potato With Cheddar Gratin

  • 4 large baking potatoes, unpeeled
  • 1/4 cup butter
  • 1 tablespoon grated onion
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon pepper
  • 1 cup shredded cheddar cheese (4oz)
  • 1 tablespoon chopped fresh parsley

Recipe

  • 1 thinly slice the potatoes and place in a greased shallow 2 quart baking dish.
  • 2 in a small saucepan, heat butter, onion, salt, thyme and pepper until butter is melted.
  • 3 drizzle over potatoes, cover and bake at 425 degrees for 45 minutes or until tender.
  • 4 sprinkle with cheese and parsley and bake uncovered for 15 minutes longer or until cheese is melted.

Potato Wedges With A Red Pepper Dip

  • 1 large baking potato, cut into 6-8 long wedges
  • 1 teaspoon olive oil
  • 2 red peppers, cut in half and seeded
  • 420 g cannellini beans, drained
  • 1 tablespoon lemon juice
  • 1 tablespoon tomato ketchup

Recipe

  • 1 preheat the oven to 200 c or 400°f.
  • 2 brush the potato wedges with olive oil and bake for 20-30 minutes on a baking sheet until tender and browned.
  • 3 turn if necessary during cooking.
  • 4 at the same time as the potato is cooking, put the pepper halves cut-side down on a tray and roast for 15-20 minutes until tender and slightly charred.
  • 5 you can peel them if you prefer although it is not strictly necessary.
  • 6 whizz the peppers, beans, lemon juice and ketchup in a food processor until you have a thick puree.
  • 7 serve in a bowl alongside the hot, cooked wedges.

Recipe

  • 1 blend butter, flour, 1/2 teaspoons salt, pepper and milk in top of double boiler; cook until thickened, stirring constantly. fold in cheese; stir until melted. keep hot. beat hot potatoes with milk, butter and 1/4 tsp salt until fluffy. heap into greased, shallow casserole; form a crater in center. pour cheese sauce over potatoes. broil until browned. sprinkle with paprika; garnish with parsley.

  • 6 -8 large potatoes, boiled and mashed
  • 1 cup sour cream
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped chives or 2 tablespoons green onion tops

  • 1/4 cup butter or 1/4 cup margarine
  • 1 (10 ounce) package chopped spinach, thawed and drained

  • 3 bake uncovered at 400 degrees for 15 minutes.

Mushroom Stuffed Hash Browns- Draniki (belarus)

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 1 ounce dried wild mushrooms, blend (or a handful of fresh mushrooms)
  • 1/4 cup minced red onion
  • 1 teaspoon dill
  • salt
  • pepper
  • 1 1/2 lbs potatoes, peeled
  • 1/4 cup flour
  • 1 egg
  • 1/4 cup soymilk (or milk of choice)
  • salt
  • pepper
  • vegetable oil, for frying

Recipe

  • 1 rehydrate dried mushrooms according to package directions. mince and add with onion to a pan with a little oil. cook until soft. add dill and salt and pepper. remove from pan and set aside.
  • 2 shred potatoes using a grater, food processor, or mandoline. add remaining ingredients and stir together.
  • 3 heat about a 1/4 inch layer of oil in a large skillet over medium. once oil sizzles when you drop a bit of potato in it, begin cooking. spoon in draniki batter and flatten with a spoon.
  • 4 add a small spoonful of the mushroom mixture. top with more draniki batter.
  • 5 cook until browned and no longer sticks to the bottom of the pan (this should take several minutes). flip and cook on the other side. hold in a warm oven while the rest of the drakini are cooked. serve hot with sour cream.

Potato Strata With Spinach, Sausage And Goat Cheese

Ingredients

  • 1 lb italian sausage
  • 5 ounces baby spinach
  • 2 tablespoons butter
  • 10 eggs
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 6 ounces goat cheese
  • 1/3 cup sun-dried tomato
  • 2 tablespoons flour
  • 20 ounces simply potatoes diced potatoes with onion

Recipe

  • 1 preheat an oven to 350°f.
  • 2 heat a large frying pan over medium heat. remove the sausage from its casings, and cook the sausage thoroughly, crumbling it into small pieces. drain the sausage on a paper towel and set aside. pour off the remaining fat, then add the spinach to the pan and cook until wilted, about 2 minutes. let cool, then squeeze the spinach so that excess liquid is removed.
  • 3 place the butter in a 2-quart baking dish, and place in the oven to melt.
  • 4 in a large bowl, mix together the eggs, 2/3 of the goat cheese, sundried tomatoes, flour, salt and pepper. add in the diced potatoes, spinach and sausage. mix to combine.
  • 5 carefully remove the dish with the melted butter from the oven, then pour the egg mixture into the dish. crumble the remaining goat cheese over the top, then carefully place back in the oven.
  • 6 bake the strata until the eggs are set in the middle, about 50-55 minutes. let cool for 5 minutes before eating.

  • 3 green chilies, 3
  • 2 -3 coriander leaves, 2-3
  • 2 -3 mint leaves, 2-3
  • garam masala powder

Recipe

  • 1 pre heat oven to 180 º celsius.
  • 2 apply salt, ground paste and oil to potato wedges.
  • 3 grease a baking tray and place potato wedges on it.
  • 4 bake the potatoes for ten to fifteen minutes at 180 º celsius serve hot with chutney or sauce.

Thai Styled Potato Salad

Ingredients

  • Servings: 6
  • 5 lbs red potatoes (or yukon gold)
  • 1 cup mayonnaise (set aside 1/2 cup)
  • 1/4 cup celery, chopped fine
  • 1/4 cup red onion, chopped fine
  • 1/4 cup bell pepper, chopped fine
  • 3 hard-boiled eggs, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon smooth peanut butter
  • 1 teaspoon grated fresh ginger
  • 1/4 cup cilantro, chopped fine
  • 1 tablespoon jalapeno pepper, chopped fine (adjust up or down for level of heat you like)
  • salt and pepper, to taste

Recipe

  • 1 wash and quarter the bag of potatoes.
  • 2 boil for 20 minutes or until semi-tender. don't over boil.
  • 3 strain potatoes.
  • 4 blanche in cool water to stop the cooking.
  • 5 in a bowl add a 1/2 cup of the mayo, mix gently and put in the fridge for about 3 hours.
  • 6 take out of fridge and add mayo, celery, onions, bell peppers, eggs, cilantro, soy, lime, peanut butter, ginger, jalapeno, salt and pepper.
  • 7 fold gently, to incorporate all the ingredients.
  • 8 let sit in refrigerator for about 45 minutes before serving.
  • 9 mix in the bacon just before serving to your family and/or guests.

Potato Wedges With Roasted Garlic Dip

Ingredients

  • 3 lbs potatoes, unpeeled and halved
  • 2 tablespoons olive oil
  • 1 garlic clove, finely chopped
  • 2 teaspoons salt
  • 2 heads garlic, bulbs separated into cloves
  • 1 tablespoon olive oil
  • 5 tablespoons sour cream or 5 tablespoons strained plain yogurt
  • 4 tablespoons mayonnaise
  • paprika, to taste
  • salt

Recipe

  • 1 make the roasted garlic dip:
  • 2 preheat the oven to 400°. place the garlic cloves in an ovenproof dish, then pour in the olive oil and toss to coat. spread out in a single layer and roast in the preheated oven of 25 min or until tender. remove from the oven and let stand until cool enough to handle.
  • 3 peel the garlic cloves, then place on a heavy cutting board and sprinkle with a little salt. mash well with a fork until smooth. scrape into a bowl and stir in the sour cream and mayonnaise. season to taste with salt and paprika. cover the bowl with plastic wrap and let chill until ready to serve.
  • 4 make the potatoes:.
  • 5 to cook the potatoes, cut each potato half into 3 wedges and place in a large bowl. add the olive oil, garlic, and salt and toss well. transfer to a roasting pan, then arrange in a single layer and roast in the preheated oven for 1-1 1/4, or until crisp and golden.
  • 6 remove from the oven and transfer to serving bowls. serve immediately, handing round the roasted garlic dip separately.

  • 2 cups half-and-half

  • 1 mix all ingredients together except the cheese.
  • 2 sprinkle the cheese on top.
  • 3 bake 60-90 minutes at 325-350°f.
  • 4 baking time is important.

Irish Champ (mashed Potatoes)

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 6 -8 unpeeled potatoes
  • 1 bunch green onion
  • 1 1/2 cups milk
  • 4 -8 tablespoons butter
  • salt & pepper

Recipe

  • 1 finely chop the green onions (& green tops) and mix with the cold milk.
  • 2 bring slowly to a boil and simmer 3-4 minutes, turn off the heat and leave to infuse.
  • 3 peel and mash the cooked potatoesand while still hot mix with the boiled milk& green onions.
  • 4 beat in some of the butter.
  • 5 season with salt& pepper.
  • 6 put a knob of butter on top& serve.
  • 7 you can do this recipe ahead and reheat in a 350f oven, covered with foil until hot (apprx 30 minutes).

T'ang Ts'u Wan Tzu

Ingredients

  • 1 cup mashed potatoes, packed
  • 2 egg whites
  • 1/4 cup cornstarch
  • 2 tablespoons minced water chestnuts, fresh
  • 1 teaspoon salt
  • 1/8 teaspoon msg
  • 2 tablespoons black sesame seeds or 2 tablespoons sesame seeds
  • 2 cups oil
  • 1/4 cup distilled vinegar
  • 1/4 cup dry sherry
  • 2 tablespoons braggs liquid aminos or 2 tablespoons soy sauce
  • 2 tablespoons catsup
  • 2 tablespoons water
  • 5 tablespoons sugar
  • 2 tablespoons cornstarch

Recipe

  • 1 combine mashed potatoes, eggwhites and corn starch. stir in one direction until becomes smooth and elastic but very soft. if it is too dry add water [2 to 3 tbsp].
  • 2 add minced water chestnuts, salt and msg. mix well.
  • 3 wet hankds and shape into balls a bit bigger than walnuts. roll sparingly in the seeds.
  • 4 heat wok to very hot. add oil. heat to 350°f fry balls a few at a time until golden. drain and set aside. keep the oil hot.
  • 5 heat saucepan and add 3 tbsp oil from wok.
  • 6 combine sauce ingredients. make sure sugar and cornstarch are dissolved. add to saucepan and stir constantly.
  • 7 at the same time refry the balls in the wok for 1 minute. use the strainer and remove balls placing in saucepan.
  • 8 stir quickly, coat entirely with sauce. remove and serve very hot.
  • 9 4 servings main course, 8 servings side dish.

Potato Turnip Garlic Mash

Ingredients

  • 6 -8 potatoes, medium, boiled until tender
  • 2 cups turnips, cubed and boiled until tender
  • 2 -3 garlic cloves, minced, chopped
  • milk or cream

Recipe

  • 1 boil turnip and potatoes unttil tender.
  • 2 drain and mash lightly leaving a little chunky.
  • 3 add garlic (either roasted, minced, chopped) and enough milk to mash with.

Mediterranean Stuffed Potato Dumplings With Mushroom Cream Sauce

Ingredients

  • 1 (20 ounce) package simply potatoes diced potatoes with onion
  • 2 eggs
  • 1 teaspoon sea salt
  • 9 ounces frozen spinach, thawed and squeezed dry
  • 1/2 cup all-purpose flour
  • 1/2 cup of grated parmesan cheese
  • 5 ounces goat cheese
  • 1/3 cup sun-dried tomato packed in oil, finely diced and drained
  • 3/4 teaspoon dried basil
  • 8 slices bacon, diced
  • 1/2 cup diced onion
  • 8 ounces sliced mushrooms, i used baby bellas
  • 16 ounces heavy whipping cream
  • salt
  • 1/4 cup of diced chives or 1/4 cup green tops green onion

Recipe

  • 1 combine goat cheese, sundried tomatoes and basil in a bowl, set aside.
  • 2 place potatoes in a large covered microwave safe bowl. microwave for six minutes or until potatoes are very soft, cool to room temperature. add eggs to bowl, beat mixture until potatoes and eggs are well combined. add salt, pepper and spinach, continue beating. slow down mixer, or stir in flour and parmesan cheese to create stiff dough.
  • 3 divide dough into 10 balls; flatten into ¼ “thick circles. place cheese filling in the middle of each circle. pinch edges up around filling to create a ball, roll in palms to smooth.
  • 4 fill a large pot half way with water, bring to a gentle boil. add dumplings, cook for 10 minutes or until cooked through. remove each dumpling from water with a slotted spoon.

  • 1 *please note that quantities are approximate. but a lot of fresh herbs is nice, and tougher herbs like rosemary should be chopped finely.
  • 2 do not use very small baby potatoes: slightly smaller than a golf ball is about right.
  • 3 rinse; do not peel. cut each in half.
  • 4 boil in lightly salted water until just tender -- this should not take more than 4 to 6 minutes depending on size and type of potato, but do test one with a skewer. they should still be firm and not fall apart!
  • 5 rinse and chop the herbs, which must be fresh, not dried.
  • 6 drain potatoes, put into suitable dish, add the olive oil and toss until well coated. a high quality, nice and fruity virgin oil should be used. use more if you like.

  • 1 soak beans together over night.
  • 2 chop first onion, cube lamb, chop garlic, and chop cilantro. toss in bowl with salt and spices and put in slow cooker on low over night or on high all day. fill to the top of lamb with pineapple juice.
  • 3 dice mangos, onions, peppers, and habanero. heat large skillet on medium heat and slowly render bacon until bacon starts to turn brown. add onions to the bacon fat and sweat on medium heat. add diced peppers, habaneros, and ginger and cook until soft. take off heat and set to side. take the same pan and heat mangos and cilantro, add spices, salt and pepper, and deglaze with cider vinegar. set aside with onions and peppers.

parsnip potato latkes w/horseradish cream

Ingredients

  • 1/2 cup sour cream
  • 1 teaspoon prepared horseradish, to taste
  • 2 1/2 cups shredded peeled potatoes
  • 2 1/2 cups shredded peeled parsnips
  • 1 cup shredded peeled carrot
  • 1/2 cup chopped onion
  • 1/4 cup flour
  • salt, pepper
  • 1 -2 tablespoon oil (for frying)

Recipe

  • 1 combine sour cream and horseradish, refrigerate combine parsnips, potatoes, carrots in a colander.
  • 2 press down with paper towels to remove excess moisture.
  • 3 place in a large bowl, add onions, flour, salt, pepper preheat oven to 400 divide parsnip mixture into 10 patties (latkes) heat oil in skillet, fry 5 latkes at a time, about 3 minutes per side until brown, remove to a baking sheet, repeat with remaining latkes.

  • 1 in a large pot of boiling, salted water, cook the parsnips and potatoes until tender, 25 to 30 minutes. drain, reserving 1/2 cup cooking water. return the vegetables to the pot. add the milk, sour cream and 4 tablespoons butter.

  • 3 medium yukon gold potatoes (sliced thin)
  • 2 teaspoons sea salt
  • 4 tablespoons olive oil (divided in half)
  • 3 green onions (cut in pieces..i used my scissors)
  • 2 tablespoons herbs (i used rosemary-garlic.. baron's savory secrets)
  • 2 -3 cups goat's cheese (i used feta)

  • 1 slice up the potatoes thin. i used my mandolin and it worked perfect.
  • 2 then put the potato slices in a bowl and salt them, toss to coat. then cover with water and put in the fridge for an hour.
  • 3 once the hour is up, remove the potatoes from the water and lay them out on paper towels to dry. pat the tops dry if it is humid in your house.
  • 4 put the shelf in your oven up to at least the middle of the oven, otherwise the bottom of the crust might burn. preheat your oven to 450-500'f. you need it good and hot.

  • 2 cut potatoes into 1/4" slices. (peel first if using russets. you don't need to peel yukon gold or red potatoes.).
  • 3 place potatoes in bowl of cold water, set aside.
  • 4 in a 4-quart saucepan, bring 3 quarts of water to a boil.
  • 5 immerse tomatoes into boiling water for 30 seconds.
  • 6 remove with slotted spoon and immediately place into bowl of ice water.
  • 7 using a sharp knife, peel and remove core of tomatoes. *if you don't mind the skins, you can omit this step.
  • 8 cut tomatoes into 1/2" slices.
  • 9 in small bowl, combine chopped parsley, 1/2 teaspoons salt, basil, nutmeg and tarragon.
  • 10 peel and thinly slice the onions.
  • 11 drain potatoes and pat dry.
  • 12 place half of the potatoes in casserole dish, sprinkle with half of the parsley mixture and half of the chopped garlic, or to taste.
  • 13 top with half of the onions and half of the tomatoes.
  • 14 sprinkle the tomatoes with 1/4 teaspoons salt.
  • 15 top with 1 cup gruyere.
  • 16 repeat with second half of ingredients layering the same except for the cheese.
  • 17 after sprinkling the top layer of tomatoes with a 1/4 teaspoons salt, cut butter into small pieces and dot top.
  • 18 cover casserole loosely with foil.
  • 19 bake in 400 degree oven for 45 minutes or til potatoes are fork-tender.
  • 20 remove foil and top with remaining cup of gruyere cheese.
  • 21 bake uncovered for 5 more minutes or until cheese is lightly browned.
  • 22 also really good with sliced black olives sprinkled on top!
  • 23 serve with coarse ground pepper or hot pepper flakes if desired.
