Sweet Potato Recipe

  • 2 cups drained sweet potatoes, mashed
  • 2/3 cup sugar

  • 2 eggs, beaten

  • 1/2 cup nuts
  • 1/2 cup pecans

Recipe

  • 1 after cooking, draining and mashing sweet potatoes, mix all ingredients. pour into 2 q corning ware dish. make the topping and spoon on top. bake at 350 degrees for 20 minutes.

Sweet Potato Salad

  • 6 medium sweet potatoes, peeled & cut into 3/4 inch cubes
  • 1 (8 ounce) can pineapple chunks, drained
  • 1/2 cup sliced celery
  • 1/2 cup chopped & toasted pecans
  • 1 cup mayonnaise (miracle whip) or 1 cup salad dressing (miracle whip)
  • 1/4 cup sour cream

Recipe

  • 1 in large saucepan cook sweet potatoes in boiling water for 10 minutes, or until fork tender. let cool. in a large bowl, combine sweet potatoes, pineapple, celery, and pecans. combine mayonnaise or salad dressing and the sour cream. fold into salad. chill if desired.

Sweet Potato Quesadillas

Ingredients

  • 1 cup finely chopped onion
  • 1 garlic clove, pressed
  • 2 tablespoons vegetable oil
  • 2 cups grated peeled sweet potatoes (about 1 large or 2 small potatoes)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 2 teaspoons ground cumin
  • 1 pinch cayenne
  • salt
  • pepper
  • 1/2 cup grated sharp cheddar cheese or 1 cup crumbled goat cheese
  • 4 (8 -10 inch) tortillas
  • salsa
  • sour cream
  • avocado

Recipe

  • 1 saute the onions and garlic in oil until onions are translucent. add the potatoes, oregano, chili, cumin and cayenne and cook, covered for about 10 minutes, stirring frequently. when the potato is tender, add the salt and pepper to taste and take off the heat.
  • 2 spread 1/4 of the filling and 1/4 of the cheese on half of each tortilla. fold the tortilla in half to cover. cook by lightly frying on each side until browned and cheese is melted.
  • 3 serve immediately with salsa, avocado slices and sour cream.

Tex Mex Potato Salad With Roasted Corn

  • 3 lbs red potatoes, cooked and cubed
  • 2 (15 ounce) cans whole kernel corn, drained
  • 2 1/2 teaspoons chili powder, divided
  • 1 cup light mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lime, juice of
  • 1 (12 ounce) jar roasted red peppers, drained and chopped
  • 5 1/2 ounces sliced black olives, partially drained
  • 6 -8 green onions, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped

Recipe

  • 1 in a 400% oven, roast one can of corn with 1/2 teaspoons chili powder for 15 minutes, stirring twice. set aside.
  • 2 in a large bowl, mix mayonaisse, remaining chili powder, salt, pepper, and lime juice. mix well. add potatoes, peppers, olives, remaining can of corn, green onions, cilantro, and parsley. mix well. cover & chill.
  • 3 to serve, garnish with roasted corn.

Sweet Potato Puree

  • 8 lbs sweet potatoes, baked (about 6 large or 8-10 medium)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup heavy cream
  • 2 eggs, beaten
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon salt (or to taste)
  • 3/4 cup pecans, toasted and chopped

Recipe

  • 1 heat oven to 350 degrees.
  • 2 peel and mash sweet potatoes. (i use a food mill for this.).
  • 3 in a large bowl, combine potatoes with butter, cream, eggs, cinnamon, vanilla, salt and 1/2 cup pecans, mixing until well blended.
  • 4 pour mixture into a buttered 2 1/2 quart casserole; top with remaining pecans.
  • 5 bake 30 minutes.
  • 6 note: puree may be made a day ahead and refrigerated. be sure to bring to room temperature before baking.
  • 7 additional note: to bake the sweet potatoes, pierce each potato 2-3 times with a paring knife, place directly on oven rack and bake at 350 degrees until done, about 50-60 minutes for large potatoes. place a baking sheet on lower rack to catch drips. allow to cool before handling. while the oven is on, toast the pecans. spread out on a shallow pan and bake for about 10 minutes.

  • 1/2 cup orange marmalade or 1/2 cup apricot preserves
  • 1/4 cup brown sugar, to taste

  • 3 egg whites
  • 2 tablespoons slivered almonds, toasted lightly
  • nonstick cooking spray

Recipe

  • 1 cook sweet potatoes until tender (15 to 20 minutes in a microwave, 1 hour in a preheated 450-degree oven, or boiled for 25 minutes).
  • 2 cool and peel.
  • 3 in a large bowl, mash.
  • 4 add marmalade, sugar, orange juice and almond extract; beat with mixer until smooth.

  • 2 beat egg whites for 5 minutes and add to the mixture.

Sweet Potato Salad With Dried Cranberries

  • 1 1/2 lbs sweet potatoes, peeled and cubed
  • 1/3 cup dried sweetened cranberries

  • 1 place potatoes in a 2 quart saucepan. add enough water to cover potatoes and heat to boiling over medium-high heat.
  • 2 when potatoes start to boil, reduce heat to low; simmer 9-11 minutes or until potatoes are fork tender. drain; cool for 15 minutes.
  • 3 mix remaining ingredients in large bowl.
  • 4 gently stir cooled potatoes into yogurt mixture until well coated.

Quinoa Chowder With Spinach And Feta

  • 1 1/2 cups quinoa
  • 8 cups vegetable broth
  • 8 cups water
  • 4 garlic cloves, finely chopped
  • 1 dash ground red pepper
  • 1 lb potato, peeled and diced

  • 1 tablespoon kosher salt, plus more as needed
  • 2 tablespoons dried onion flakes
  • 2 teaspoons dried coriander

  • 1 combine potatoes and milk in a large skillet. heat to boiling, stirring often. cover, reduce heat to low, and simmer 15 minutes.

  • 2 garlic cloves, crushed
  • 2 onions, very thinly sliced

Recipe

  • 1 slice potatoes in 1/8-inch thick rounds and soak in ice water for at least 30 minutes. drain slices and pat dry with paper towels.
  • 2 combine butter and garlic.
  • 3 in a deep 10-inch greased pie plate or casserole, arrange 1/3 of the potato slices in slightly overlapping fashion, beginning with the outside edges and continuing the circle design to center of dish.

Recipe

  • 1 preheat oven to 350.
  • 2 peel and mash potatoes in a mixing bowl.

Mcalister Potatoes

Ingredients

  • 1 cup sour cream
  • 1/2 cup peppadew pepper, chopped
  • 1/4 cup wine
  • 3 lbs baby yukon gold potatoes
  • 2 tablespoons kosher salt, plus more for seasoning
  • 3/4 lb bacon, diced
  • 2 yellow onions, diced
  • 4 tablespoons olive oil, divided
  • 2 tablespoons kosher salt
  • 1 teaspoon fresh ground black pepper
  • 3 tablespoons grated parmesan cheese

Recipe

  • 1 in small mixing bowl combine sour cream, peppadew peppers, and wine. mix thoroughly and refrigerate for 1 hour.
  • 2 in large stock pot cover potatoes with water and add 2 tablespoons salt. set heat on high and boil until fork tender.
  • 3 in a large saute pan over medium heat cook bacon and saute onions until caramelized. transfer bacon and onions from pan on to a paper towel to absorb grease. distribute evenly on a platter and keep warm. leave remaining fat in pan.
  • 4 when potatoes are fork tender, drain, and with a clean kitchen towel, palm smash the hot potatoes to approximately 1/3-inch thick.
  • 5 reheat fat in saute pan and add 2 tablespoons olive oil. heat to oil medium heat and place potatoes in oil. season with salt and pepper and brown on both sides, then transfer to onion and bacon platter. repeat, adding more oil, until all potatoes are cooked crispy.
  • 6 top potatoes with parmesan and then with sour cream mixture.

Ingredients

  • 1 large sweet potato
  • 1 (1/4 ounce) package active dry yeast
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 1 tablespoon butter
  • 1 cup milk
  • 3 1/2-4 1/2 cups bread flour (all purpose can substitute)

Recipe

  • 1 peel potato and dice into a sauce pan, add enough water to cover and cook until tender, drain reserving 1/4 cup of the potato water.
  • 2 cool the potato water to lukewarm and dissolve yeast in it.
  • 3 mash potato and beat in salt, sugar and butter vigorously.
  • 4 heat milk until a film shines on top, skim and add to potato mixture. when the right temperature has been reached whisk in the dissolved yeast.
  • 5 stir in flour 1 cup at a time until kneading consistency is reached, lift onto a floured board and knead until smooth and elastic, adding flour as necessary. place in a greased bowl and cover with a tea towel, let rise in a warm place until doubled in size.
  • 6 punch down dough, pinch off pieces slightly larger than a golf ball and place in greased muffin pan, let rise until doubled.
  • 7 bake in a preheated oven at 425°f for 13 to 15 minutes or until done (ovens vary), remove to a wire rack to cool.

  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder

  • 1 (15 ounce) can sweet potatoes, in heavy sauce (drained and mashed)
  • 1/4 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla
  • 3/4 cup chopped walnuts

Tlc's Dill Potato Salad

  • 3 lbs red potatoes
  • 6 hard-boiled eggs
  • 1 cup oscar meyer bacon bits
  • 1 cup lemon butter dill seafood sauce, mccormick brand
  • 1 1/2 cups real mayonnaise
  • 1 tablespoon dried dill weed
  • 6 chopped green onions (optional)
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper

Recipe

  • 1 boil potatoes in a kettle of salted water. do not peel the potatoes. cook until fork tender – approximately 30 minutes. drain, cool, and slice. i used an egg slicer and it worked perfectly.
  • 2 cook hard-boiled eggs, cool and peel. slice with egg slicer.
  • 3 chop green onions if desired.

  • 1 put oven rack in middle position and preheat oven to 400°f

  • 1 scrub potatoes; cut off ends and place in baking pan.

  • 1 large onion, chopped
  • 6 cups sweet potatoes, peeled and grated (approx. 3 large)
  • 4 garlic cloves, minced
  • 2 teaspoons cumin

  • 1/2 cup cilantro (optional)
  • sour cream (optional)
  • 1 1/2 cups cheddar cheese, grated
  • 1 tablespoon olive oil
  • 10 flour tortillas

Recipe

  • 1 saute onion and garlic in oil until soft.

  • 3 add grated sweet potatoes and cook over medium heat covered, approximately 10 minutes, stirring often to avoid burning (you may need to add a little oil).

  • 2 baking potatoes
  • 1/2 tablespoon light margarine
  • 1 garlic clove, crushed
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh coarse ground black pepper
  • 1/2 cup light cream
  • 1/2 cup skim milk
  • 1/2 cup mild 2% cheddar cheese (grated)
  • nonstick cooking spray

Recipe

  • 1 spray pyrex dish with non-stick cooking spray.
  • 2 peel potatoes and slice thinly.
  • 3 place potatoes, overlapping slightly, in single layer on bottom of dish. sprinkle with salt & pepper.
  • 4 repeat layers until all potatoes are used.
  • 5 in separate bowl, combine cream and milk and stir well.
  • 6 pour milk mixture over the potatoes.
  • 7 cook, uncovered, in microwave on medium 15- 20 minutes. (i usually have trouble with mine boiling over, so it helps to set it on a plate, from which i can pour the liquid right back in!).
  • 8 preheat oven to 350°f.
  • 9 sprinkle grated cheese over top of potatoes and cook 20 minutes until golden brown on top.

  • 1 large tomato, diced
  • 1 cucumber, diced
  • 1 small onion, diced
  • 1/2 bunch cilantro, diced
  • 2 teaspoons fresh thyme
  • 2 tablespoons flax seed oil
  • 2 tablespoons tamari
  • 2 tablespoons apple cider vinegar
  • salt, to taste

Recipe

  • 1 add diced sweet potatoes to oven-proof baking dish. add ginger, garlic, chili powder, fenugreek, and olive oil, and mix.
  • 2 bake at 350 about 30-45 minutes, until insides are cooked and outside is slightly crispy.

  • 1 line a 15- x 10-inch jellyroll pan with aluminum foil. coat foil with vegetable cooking spray.

  • 1 cup light brown sugar, packed

Recipe

  • 1 preheat oven to 350. coat a 9-inch springform pan with cooking spray.
  • 2 toss raisins and rum in a small bowl and let stand.
  • 3 whisk flour, nutmeg and salt in another bowl.
  • 4 mash sweet potato in a large bowl.
  • 5 add eggs and beat with an electric mixer on medium speed until combined.
  • 6 add coconut milk, 1 c brown sugar and butter.

  • 8 stir in the dry ingredients until evenly moistened.

  • 1 red onion, minced

  • 2 cups roasted peanuts

  • 1 cut sweet potato into chunks, toss in a little olive oil place in large baking dish with garlic cloves.

  • 3 remove from oven peel garlic and keep warm.

  • 2 sweet potatoes, peeled and chunked
  • 4 ounces goat cheese, crumbled
  • 1 teaspoon sea salt
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh rosemary, chopped
  • olive oil, for sauteing

Recipe

  • 1 toss the sweet potato chunks in olive oil and sea salt and roast in a single layer for 25-35 minutes at 400 degrees f until lightly browned and fork tender.
  • 2 remove and mash, then mix in rosemary and goats cheese and sea salt to taste.
  • 3 form into small balls and saute in a little olive oil until lightly browned on the outside.

  • 1 teaspoon dried oregano

  • 1/4 cup olive oil

Recipe

  • 1 wash potatoes and cut into chunks. if they are the small potatoes, cut in half. if they are about the size of idahos, cut into 6 even chunks.
  • 2 mix seasonings, lemon juice, zest and oil together.
  • 3 toss potatoes with lemon mixture.
  • 4 place in a 11x7 cooking dish. do not drain off any extra lemon mixture.

  • 1 peel and cut sweet potatoes into 1 inch pieces.
  • 2 place potatoes in medium saucepan.

  • 1 medium onion, diced
  • 5 tablespoons olive oil
  • 1 lb sweet potato, cubed
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika

  • 6 -8 green olives
  • 1/2 preserved lemon, rind of, chopped (optional)
  • half a lemon, juice of
  • 2 tablespoons flat leaf parsley, chopped

Recipe

  • 1 saute onions in 2 tbsp of oil until golden.
  • 2 add the cubed sweet potato to the pan and just barely cover it with a little water.
  • 3 add ginger, cumin, paprika, salt to taste and 2 more tbsp of oil.
  • 4 cook until potato pieces are tender and the liquid has reduced to a sauce, turning the potatoes over once. be careful when handling them so that they don't fall apart.
  • 5 let cool to room temperature.
  • 6 mix in olives, and preserved lemon peel. taste and adjust salt if you need more.

Layered Vegetable Casserole

  • 8 medium potatoes, about 3 lbs
  • 4 tablespoons butter, at room temperature
  • 1 cup light sour cream or 1 cup regular sour cream
  • 1 teaspoon salt
  • 1 (300 g) package thawed frozen spinach, preferably chopped
  • 2 green onions, sliced thinly
  • 1 egg, lightly beaten
  • 1 (300 g) package frozen cooked squash, thawed
  • 1 tablespoon finely grated fresh ginger or 1/2 teaspoon dried ginger
  • 1 cup grated cheddar cheese

Recipe

  • 1 peel potatoes, cut in half.
  • 2 place in a large saucepan and cover with boiling or hot water.
  • 3 cover saucepan and bring back to the boil.
  • 4 reduce heat to medium and continue boiling gently, partially covered, until potatoes are very tender, about 20 to 30 minutes.
  • 5 drain potatoes and mash.
  • 6 stir in 2 tbs butter, sour cream and 1/2 tsp salt.
  • 7 you should have about 6 cups.
  • 8 squeeze handfuls of spinach until fairly dry.
  • 9 coarsely chop if not already chopped.
  • 10 place in a medium size bowl.
  • 11 stir in onions, egg,1 tbs butter and 1/4 tsp salt.

  • 15 butter a large caserole dish that will hold at least 8 cups or coat with cooking spray.

  • 17 evenly spread with all of the squash mixture.

  • 2 lbs sweet potatoes, peeled and cubed into 1 inch pieces

  • salt and pepper, to taste
  • 2 tablespoons maple syrup
  • 6 tablespoons olive oil
  • 2 cups grapes, divided

Recipe

  • 1 soak the raisins in the rum overnight.
  • 2 preheat oven to 400 degrees.
  • 3 in a saucepan, cook the sweet potatoes in boiling water 10 to 15 minutes, until a paring knife goes through a piece without resistance.
  • 4 drain and cool to room temperature.
  • 5 meanwhile, toast the coconut by spreading on a baking sheet and cooking in the oven 2 to 3 minutes until just beginning to brown.

  • 1/4 cup frozen sweetcorn
  • 2 tablespoons hellmann's mayonnaise

  • 1 cook potato (with skin) in microwave for approx 10 minutes or until done (depending on size of potato).

  • 1 (48 ounce) can vegetable shortening
  • 16 cups cold water, divided
  • 2 cups ice

Recipe

  • 1 peel potatoes,wash,dry, and slice with a french fry slicer into 1/4 inch square strips.
  • 2 rinse strips in a large bowl with 8 cups water until water becomes milky, drain.
  • 3 cover strips with 8 more cups water and add ice; let sit 1 hour.

  • 1 grease a 9x13 pyrex dish.

  • 1 1/2 lbs slender green beans, trimmed, halved crosswise
  • 3 teaspoons salt, plus more to taste
  • 2 large red potatoes, diced
  • 1/3 cup fresh lemon juice
  • 2 garlic cloves, finely chopped
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 3/4 teaspoon fresh ground black pepper
  • 8 ounces cherry tomatoes, halved
  • 1/2 cup chopped fresh basil leaf

  • 9 ounces canned tuna packed in oil, drained

Recipe

  • 1 cook the green beans in a large pot of boiling water until crisp-tender, stirring occasionally, about 4 minutes.
  • 2 using a mesh strainer, transfer the green beans to a large bowl of ice water to cool completely. drain the green beans and pat dry with a towel.
  • 3 add 2 teaspoons of salt to the same cooking liquid and bring the liquid to a simmer. add the potatoes to the simmering liquid and cook until they are just tender but still hold their shape, about 8 to 10 minutes. transfer the potatoes to the ice water to cool completely. drain the potatoes and pat dry with a towel.
  • 4 in a small bowl, whisk the lemon juice, garlic, oil, oregano, 1 teaspoon salt and 3/4 teaspoon pepper. place the tomatoes, basil and parsley in a large serving bowl. add the tuna and toss gently to combine. add the green beans and potatoes and gently combine. pour the dressing over the salad and toss to coat.

Ingredients

  • 2 cups peeled and mashed sweet potato (baked or boiled)
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 unbaked 9-inch deep dish pie pastry

Recipe

  • 1 put sweet potatoes and butter in mixing bowl and mix until butter is well incorporated.
  • 2 add the rest of the ingredients and mix on medium speed until smooth.
  • 3 pour into unbaked pie crust and bake on middle rack in a 350°f oven for 40 - 50 minutes or until done.
  • 4 serve with whipped cream or cool whip.
