Scalloped Potatoes

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 6 -8 large potatoes, peeled and sliced thin
  • 1 large onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 10 -12 saltine crackers, crushed
  • 1/4 cup butter or 1/4 cup margarine, cut into chunk
  • salt
  • pepper
  • 4 cups whole milk
  • 4 slices raw bacon

Recipe

  • 1 in a casserole dish layer the ingredients, using some of each ingredient except the milk and bacon,. repeat these steps until your dish is full to within 1 inch of the top. once full pour milk over all until just covering the potatoes. place bacon strips across the top of the potatoes.
  • 2 place on middle oven rack and bake at 350 degrees for 1 hour.
  • 3 place a pan or foil on the bottom of the oven in case of boil over.
  • 4 let stand for 10 minutes before serving to allow potatoes to thicken a little more before serving.
