Sweet Potato Stackers

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 16
  • 2 large sweet potatoes, peeled & cut into 8 chunky pieces
  • 1 tablespoon olive oil
  • 2 tablespoons mayonnaise (the real thing)
  • good squeeze lemon juice
  • 8 slices prosciutto, halved
  • 3 watercress, springs to serve

Recipe

  • 1 preheat oven 360ºf then toss the potato chunks with the oil and some salt & pepper on a baking sheet.
  • 2 roast for 20-30 minutes until golden and crisp on the outside, then leave to cool.
  • 3 to serve, mix the mayonnaise with the lemon juice.
  • 4 put a scrunched up piece of ham on each potato, then top with some lemony mayo.
  • 5 arrange on a platter with the watercress, then serve.
