Sweet Potato Stackers

Ingredients

- 2 large sweet potatoes, peeled & cut into 8 chunky pieces
- 1 tablespoon olive oil
- 2 tablespoons mayonnaise (the real thing)
- good squeeze lemon juice
- 8 slices prosciutto, halved
- 3 watercress, springs to serve
Recipe
- 1 preheat oven 360ºf then toss the potato chunks with the oil and some salt & pepper on a baking sheet.
- 2 roast for 20-30 minutes until golden and crisp on the outside, then leave to cool.
- 3 to serve, mix the mayonnaise with the lemon juice.
- 4 put a scrunched up piece of ham on each potato, then top with some lemony mayo.
- 5 arrange on a platter with the watercress, then serve.
