Sweet Potato Pone Aka Potato Pound Of Belize

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • 2 lbs sweet potatoes, peeled and grated
  • 4 ounces gingerroot, grated
  • 1 cup raisins
  • 1 teaspoon cinnamon or 1 teaspoon nutmeg
  • 2 cups brown sugar
  • 2 teaspoons pure vanilla extract
  • 4 cups coconut milk
  • 2 tablespoons butter, melted

Recipe

  • 1 grease a 9x13 pyrex dish.
  • 2 preheat oven to 450.
  • 3 wash, peel, and grate sweet potatoes.
  • 4 in large bowl, combine sweet potatoes, ginger, raisins, cinnamon, sugar and vanilla.
  • 5 mix well.
  • 6 add milk and butter; stirring to incorporate throughout mixture.
  • 7 pour into pyrex dish.
  • 8 bake on the bottom shelf of your oven for 30 minutes.
  • 9 lower oven temperature to 350.
  • 10 move dish to top shelf.
  • 11 cook for an additional hour until top is brown, knife comes out clean.
  • 12 the top will look very sticky.
