Restaurant Quality 1 Hour Easy Roasted Potatoes And Mushrooms

Total Time: 1 hr Preparation Time: 5 mins Cook Time: 55 mins

Ingredients

  • Servings: 3
  • 1 lb red potatoes, quartered
  • 1 lb potato, quartered
  • 1/2 lb fresh cremini mushroom, sliced into thirds
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 tablespoon red wine
  • 1 tablespoon parsley
  • 1 teaspoon chopped garlic
  • 1 teaspoon onion powder
  • 1 pinch crushed red pepper flakes

Recipe

  • 1 preheat oven to 375.
  • 2 wash and quarter potatoes.
  • 3 wash and slice mushrooms into thirds, or about 1/2" slices.
  • 4 spray 5 qt or large oven-proof round cassarole dish.
  • 5 add all ingredients except parsley and stir.
  • 6 bake for 10 minutes uncovered.
  • 7 remove and stir well.
  • 8 cover and continue baking for 45 minutes
  • 9 remove and check for doneness, add parsley and give a final stir.
  • 10 serve!
