Sweet & Savory Mashed Sweet Potatoes #sp5

Ingredients

• 1 (24 ounce) package simply potatoes mashed sweet potatoes
• 1/2 cup pesto sauce (homemade or store bought)
• 4 -6 slices bacon, cooked and chopped into bits
• 1 tablespoon maple syrup
• salt & pepper

Recipe

• 1 preheat the oven to 350.
• 2 prepare mashed sweet potatoes per package instructions. set aside.
• 3 make a pesto using basil, olive oil (or oil of choice), and pine nuts (or a nut of choice). alternately, use prepared pesto from the store.
• 4 cook bacon in a pan 6-7 minutes per side. let it cool, then chop into bits.
• 5 combine the pesto, bacon, maple syrup and salt and pepper to the mashed sweet potatoes, and place in a baking dish.
• 6 bake the potatoes for 20 minutes, or until heated through.
• 7 enjoy!
