Low-fat Potatoes Romanoff

Ingredients

  • Servings: 6
  • 4 potatoes, quartered
  • 1 tablespoon butter
  • 1 cup low-fat sour cream
  • 4 whole green onions, sliced
  • 1 1/4 cups low-fat cheddar cheese, shredded
  • 1 teaspoon salt
  • 1 dash pepper
  • paprika

Recipe

  • 1 boil potatoes until tender.
  • 2 mash with butter, sour cream, onions, 3/4 cup cheese, salt and pepper.
  • 3 turn mixture into buttered 1-1/2 quart casserole. sprinkle with remaining cheese and paprika.
  • 4 bake uncovered at 350 degrees for 40 minutes.
