Pan-fried Potatoes With Paprika And Lemon

Ingredients

- 3 tablespoons olive oil
- 2 1/4 lbs russet potatoes, unpeeled, 1 1/2-inch pieces
- 1 medium onion, chopped
- 1 teaspoon hungarian paprika
- 2 tablespoons fresh lemon juice
- 2 tablespoons italian parsley, chopped
Recipe
- 1 heat oil in heavy large pot over high heat.
- 2 add potatoes and saute until beginning to brown, about 12 minutes.
- 3 reduce heat to medium.
- 4 add onion; saute until onion is just tender, about 4 minutes.
- 5 mix in paprika.
- 6 cook until potatoes are tender, stirring occasionally, about 5 minutes.
- 7 sprinkle potato mixture with lemon juice and parsley.
- 8 season with salt and pepper.
