Pan-fried Potatoes With Paprika And Lemon

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 2 1/4 lbs russet potatoes, unpeeled, 1 1/2-inch pieces
  • 1 medium onion, chopped
  • 1 teaspoon hungarian paprika
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons italian parsley, chopped

Recipe

  • 1 heat oil in heavy large pot over high heat.
  • 2 add potatoes and saute until beginning to brown, about 12 minutes.
  • 3 reduce heat to medium.
  • 4 add onion; saute until onion is just tender, about 4 minutes.
  • 5 mix in paprika.
  • 6 cook until potatoes are tender, stirring occasionally, about 5 minutes.
  • 7 sprinkle potato mixture with lemon juice and parsley.
  • 8 season with salt and pepper.
