Potato, Fontina, And Oregano Pizza

Ingredients

  • pizza dough, for a 12-inch pizza
  • 1/4 cup melted onions (melted onions or tomatoes) or 1/4 cup caramelized onion (melted onions or tomatoes)
  • 1 yukon gold potato
  • 1/3 cup fontina cheese, grated
  • 2 tablespoons fresh oregano
  • 2 tablespoons parmesan cheese or 2 tablespoons grana padano, grated
  • kosher salt
  • fresh ground black pepper

Recipe

  • 1 preheat broiler; prepare dough according to your favorite recipe or package directions.
  • 2 spread onions over pizza dough.
  • 3 use a mandoline and cut potato into 1/16-inch slices; spread over onions.
  • 4 sprinkle with cheeses and oregano; season with salt and pepper.
  • 5 place pizza on a pizza stone and cook under the broiler until edges are golden, 6 to 8 minutes; be sure to rotate pizza every 2 minutes for even cooking.
  • 6 remove from oven, slice and serve.
