Norwegian Potato Mushroom Bake

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 teaspoons butter
  • 1 lb fresh mushrooms, sliced
  • 4 cups mashed potatoes
  • 2 medium eggs, beaten
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cardamom powder
  • 1 bunch chives, chopped

Recipe

  • 1 preheat the oven to 425°f spray a 9x9 glass baking dish with cooking spray.
  • 2 melt the butter in a frying pan then saute the mushrooms for 5 minutes. meanwhile, mix the remaining ingredients, except for the chives, in a large bowl.
  • 3 scatter the mushrooms in the bottom of the glass dish, top evenly with the potatoes.
  • 4 bake until the potatoes are slightly browned, roughly 15-20 minutes. sprinkle with chives & serve.
