Ham N' Cheese Scalloped Potatoes

Ingredients
- Servings: 6
- 6 cups thinly sliced potatoes
- 4 cups cubed 1 inch cooked ham
- 1 cup thinly sliced onion, separated into rings
- 1/4 cup butter or 1/4 cup margarine
- 1/3 cup all-purpose flour
- 1 teaspoon dry mustard
- 1/2 teaspoon pepper
- 2 cups milk
- 3 cups shredded cheddar cheese
- 2 tablespoons chopped fresh chives
Recipe
- 1 heat oven to 350 degrees.
- 2 in 13x9 pan layer potatoes, ham and onion.
- 3 in 2 quart saucepan melt butter until sizzling.
- 4 stir in flour, mustard and pepper.
- 5 cook over medium heat, stirring constantly, until smooth and bubbly (1 minute).
- 6 add milk, continue cooking, stirring occasionally, until sauce is thickened (2 to 3 minutes).
- 7 stir in cheese until melted (3 to 4 minutes).
- 8 pour sauce over potatoes.
- 9 sprinkle with chives.
- 10 bake for 60 to 75 minutes or until bubbly and potatoes are fork tender.
