Ham N' Cheese Scalloped Potatoes

Ingredients

  • Servings: 6
  • 6 cups thinly sliced potatoes
  • 4 cups cubed 1 inch cooked ham
  • 1 cup thinly sliced onion, separated into rings
  • 1/4 cup butter or 1/4 cup margarine
  • 1/3 cup all-purpose flour
  • 1 teaspoon dry mustard
  • 1/2 teaspoon pepper
  • 2 cups milk
  • 3 cups shredded cheddar cheese
  • 2 tablespoons chopped fresh chives

Recipe

  • 1 heat oven to 350 degrees.
  • 2 in 13x9 pan layer potatoes, ham and onion.
  • 3 in 2 quart saucepan melt butter until sizzling.
  • 4 stir in flour, mustard and pepper.
  • 5 cook over medium heat, stirring constantly, until smooth and bubbly (1 minute).
  • 6 add milk, continue cooking, stirring occasionally, until sauce is thickened (2 to 3 minutes).
  • 7 stir in cheese until melted (3 to 4 minutes).
  • 8 pour sauce over potatoes.
  • 9 sprinkle with chives.
  • 10 bake for 60 to 75 minutes or until bubbly and potatoes are fork tender.
