Ham Corn And Sweet Potato Patties

Ingredients

• 1 large sweet potato
• 1 teaspoon minced garlic
• 2 cups ham, diced
• 2/3 cup monterey jack pepper cheese, shredded
• 1 cup corn
• 1 large egg
• 3 tablespoons fresh parsley, chopped
• 2 teaspoons olive oil

Recipe

• 1 bake sweet potato. spoon out pulp into bowl, breaking up with a fork. stir in garlic, ham, cheese, corn, egg and parsley. shape into 8 (1/2 inch thick) patties.
• 2 in large skillet, heat oil. add patties and cook 5 minutes per side.
