Smashed Potatoes With Green Garlic Butter

Ingredients

- 3 lbs yukon gold potatoes, peeled and quartered
- 1 cup heavy cream
- 2 teaspoons salt
- 1/2 cup butter, softened
- 2 cloves garlic
- 6 tablespoons chopped fresh parsley
- salt and pepper
Recipe
- 1 boil potatoes and salt covered with water until done.
- 2 meanwhile, place butter, garlic and parsley in food processor and process until smooth.
- 3 drain potatoes well and place back in pan over low heat.
- 4 add cream and garlic butter and mash by hand.
- 5 add salt and pepper to taste.
