Smashed Potatoes With Green Garlic Butter

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 3 lbs yukon gold potatoes, peeled and quartered
  • 1 cup heavy cream
  • 2 teaspoons salt
  • 1/2 cup butter, softened
  • 2 cloves garlic
  • 6 tablespoons chopped fresh parsley
  • salt and pepper

Recipe

  • 1 boil potatoes and salt covered with water until done.
  • 2 meanwhile, place butter, garlic and parsley in food processor and process until smooth.
  • 3 drain potatoes well and place back in pan over low heat.
  • 4 add cream and garlic butter and mash by hand.
  • 5 add salt and pepper to taste.
