Susan’s Decadent Holiday Mashed Potatoes

Ingredients

- 6 lbs potatoes, peeled and quartered
- 1/2 cup butter
- 1 head garlic, roasted
- 12 ounces plain yogurt
- 4 ounces cream cheese, cubed
- 1/2 cup parmesan cheese, grated
- 1/2 tablespoon salt
- 2 teaspoons ground black pepper
- 2 teaspoons chives
Recipe
- 1 in large stockpot, cover potatoes with water.
- 2 gather butter, yogurt, milk and cream cheese. let stand to reach room temperature.
- 3 cook potatoes until tender, adding more water as needed.
- 4 drain and return to stockpot.
- 5 add butter, garlic, yogurt and cream cheese; beat until smooth.
- 6 stir in parmesan cheese, salt, and pepper.
- 7 add small amount of warmed milk, if needed.
- 8 garnish with chives just before serving.
- 9 these potatoes can be made ahead and often have a better flavor as a result. when serving the next day, add milk to thin as desired.
