Roasted Vegetables

Ingredients

  • Servings: 12
  • 1 small butternut squash, cubed
  • 2 red bell peppers, seeded and diced
  • 1 sweet potato, peeled and cubed
  • 3 yukon gold potatoes, cubed
  • 1 red onion, quartered
  • 1 tablespoon chopped fresh thyme
  • 2 tablespoons chopped fresh rosemary
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • salt and freshly ground black pepper

    Preparation Time: 15 mins Cook Time: 40 mins Ready Time: 55 mins

  • preheat oven to 475 degrees f (245 degrees c).
  • in a large bowl, combine the squash, red bell peppers, sweet potato, and yukon gold potatoes. separate the red onion quarters into pieces, and add them to the mixture.
  • in a small bowl, stir together thyme, rosemary, olive oil, vinegar, salt, and pepper. toss with vegetables until they are coated. spread evenly on a large roasting pan.
  • roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.

Old Irish Scalloped Potatoes

Ingredients

  • Servings: 8
  • 6 potatoes, peeled and thinly sliced
  • 1/2 cup butter, cut into thin slices
  • salt and ground black pepper to taste
  • 1 pint half-and-half

  • preheat oven to 325 degrees f (165 degrees c).
  • arrange thinly sliced potatoes in a 9x13-inch baking dish.
  • layer butter slices on top of potatoes. season with salt and black pepper.
  • pour half-and-half evenly over potato mixture.
  • bake in preheated oven until sauce has thickened and potatoes are tender, 45 to 60 minutes.

Addictive Sweet Potato Burritos

Ingredients

  • Servings: 12
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups canned kidney beans, drained
  • 2 cups water
  • 3 tablespoons chili powder
  • 4 teaspoons prepared mustard
  • 2 teaspoons ground cumin
  • 1 pinch cayenne pepper, or to taste
  • 3 tablespoons soy sauce
  • 4 cups mashed cooked sweet potatoes
  • 12 (10 inch) flour tortillas, warmed
  • 8 ounces shredded cheddar cheese

  • preheat oven to 350 degrees f (175 degrees c).
  • heat oil in a medium skillet and saute onion and garlic until soft. mash beans into the onion mixture. gradually stir in water; heat until warm, 2 to 3 minutes. remove from heat and stir in the soy sauce, chili powder, mustard, cumin, and cayenne pepper.
  • divide bean mixture and mashed sweet potatoes evenly between the tortillas; top with cheese. fold tortillas burrito-style around the fillings and place on a baking sheet.
  • bake in the preheated oven until warmed through, about 12 minutes.

oven roasted potatoes

  • 1/8 cup olive oil
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon dried dill weed
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 4 large potatoes, peeled and cubed

  • preheat oven to 475 degrees f (245 degrees c).
  • in a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. stir in potatoes until evenly coated. place potatoes in a single layer on a roasting pan or baking sheet.
  • roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.

Honey Roasted Red Potatoes

Ingredients

  • 1 pound red potatoes, quartered
  • 2 tablespoons diced onion
  • 2 tablespoons butter, melted
  • 1 tablespoon honey
  • 1 teaspoon dry mustard
  • 1 pinch salt
  • 1 pinch ground black pepper

Recipe

    Preparation Time: 10 mins Cook Time: 35 mins Ready Time: 45 mins

  • preheat oven to 375 degrees f (190 degrees c). lightly coat an 11x7 inch baking dish with nonstick cooking spray.
  • place potatoes in a single layer in prepared dish, and top with onion. in a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
  • bake in the preheated 375 degrees f (190 degrees c) oven for 35 minutes or until tender, stirring halfway through the cooking time.

Pierogi Casserole

Ingredients

  • Servings: 1
  • 5 potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1/2 pound bacon, diced
  • 1 onion, chopped
  • 6 cloves garlic, minced
  • 1/2 (16 ounce) package lasagna noodles
  • 2 cups shredded cheddar cheese
  • salt and pepper to taste
  • 1 (8 ounce) container sour cream
  • 3 tablespoons chopped fresh chives

  • preheat oven to 350 degrees f (175 degrees c).
  • place the potatoes in a large pot with water to cover over high heat. bring to a boil and cook until the potatoes are tender. remove from heat, drain, then combine with the milk and 6 tablespoons of butter, mash and set aside.
  • melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat. saute the bacon, onion and garlic in the butter for 5 to 10 minutes, or until the bacon is fully cooked.
  • cook the lasagna noodles according to package directions and cool under running water.
  • place 1/2 of the mashed potatoes into the bottom of a 9x13 inch baking dish. top this with 1/3 of the cheese, followed by a layer of lasagna noodles. repeat this with the remaining potatoes, another 1/3 of the cheese and a layer of noodles. then arrange the bacon, onion and garlic over the noodles, then another layer of noodles, and finally top all with the remaining cheese. season with salt and pepper to taste.
  • bake, uncovered, at 350 degrees f (175 degrees c) for 30 to 45 minutes, or until the cheese is melted and bubbly. serve with sour cream and chopped fresh chives.

shredded potato salmon cakes

Ingredients

  • Servings: 12
  • 3 medium potatoes, peeled and shredded
  • 2 eggs
  • salt and pepper to taste
  • 1 teaspoon italian seasoning
  • 1/2 pound cooked flaked salmon
  • 3 green onions, chopped
  • 2 tablespoons capers, drained
  • 1 red bell pepper, seeded and chopped
  • 3/4 cup chopped canned banana peppers
  • 3/4 cup sliced fresh mushrooms
  • 3/4 cup dry bread crumbs
  • 1 cup oil for frying, or as needed

  • squeeze as much liquid from the potatoes as you can, and place in a large bowl. beat the eggs with salt, pepper, and italian seasoning, and mix with the potatoes. mix in salmon, green onions, capers, red bell pepper, banana peppers, mushrooms and bread crumbs. form into about 12 patties about 3/4 inch thick.
  • heat 1/4 inch of oil in a large heavy skillet over medium-high heat. fry the patties for about 3 minutes per side, or until golden brown. drain on paper towels quickly before serving. try to fry all the patties at one time, otherwise the mixture becomes stiff.
