Addictive Sweet Potato Burritos

Ingredients

  • Servings: 12
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups canned kidney beans, drained
  • 2 cups water
  • 3 tablespoons chili powder
  • 4 teaspoons prepared mustard
  • 2 teaspoons ground cumin
  • 1 pinch cayenne pepper, or to taste
  • 3 tablespoons soy sauce
  • 4 cups mashed cooked sweet potatoes
  • 12 (10 inch) flour tortillas, warmed
  • 8 ounces shredded cheddar cheese

  • preheat oven to 350 degrees f (175 degrees c).
  • heat oil in a medium skillet and saute onion and garlic until soft. mash beans into the onion mixture. gradually stir in water; heat until warm, 2 to 3 minutes. remove from heat and stir in the soy sauce, chili powder, mustard, cumin, and cayenne pepper.
  • divide bean mixture and mashed sweet potatoes evenly between the tortillas; top with cheese. fold tortillas burrito-style around the fillings and place on a baking sheet.
  • bake in the preheated oven until warmed through, about 12 minutes.

Baked Sweet Potato Sticks

Ingredients

  • Servings: 8
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 8 sweet potatoes, sliced lengthwise into quarters

  • preheat oven to 400 degrees f (200 degrees c). lightly grease a baking sheet.
  • in a large bowl, mix olive oil and paprika. add potato sticks, and stir by hand to coat. place on the prepared baking sheet.
  • bake 40 minutes in the preheated oven.

Mashed Potatoes With Horseradish

Ingredients

  • Servings: 4
  • 5 potatoes, peeled and quartered
  • 2 tablespoons butter, divided
  • ground black pepper to taste
  • 1/2 cup sour cream
  • 1 tablespoon prepared horseradish
  • 2 teaspoons minced parsley

  • bring a large pot of salted water to a boil. add potatoes and cook until tender but still firm, about 15 minutes. drain, and mash with 1 tablespoon butter and black pepper. stir in sour cream, horseradish and parsley. whip potatoes and place in medium serving bowl.
  • melt remaining 1 tablespoon butter and pour over potatoes. serve immediately.

  • 1 teaspoon dried basil
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste

    Preparation Time: 20 mins Cook Time: 25 mins Ready Time: 45 mins

  • preheat oven to 400 degrees f (200 degrees c). lightly grease a medium baking sheet.
  • arrange potato strips in a single layer on the prepared baking sheet, skin sides down. spray lightly with cooking spray, and sprinkle with basil, parmesan cheese, salt and pepper.
  • bake 25 minutes in the preheated oven, or until golden brown.

  • 1 teaspoon ground cinnamon
  • 6 large sweet potatoes

  • 2 teaspoons salt
  • 6 firm bananas, sliced
  • 2 (8 ounce) cans crushed pineapple
  • 1 cup pineapple juice
  • 1 teaspoon lemon juice
  • 2 tablespoons honey

    Ready Time: 1 hr 15 mins

  • preheat an oven to 350 degrees f (175 degrees c). butter a 9x13-inch baking dish. stir together the brown sugar and cinnamon until evenly blended; set aside.
  • place the sweet potatoes into a large pot and cover with salted water. bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until just tender, 15 to 20 minutes. drain and allow to steam dry for a minute or two; peel and cut into 1/2 inch slices.
  • layer the potatoes into the prepared baking dish, dot with butter, and sprinkle with salt. arrange the bananas over the potatoes and sprinkle evenly with the brown sugar mixture. top with the crushed pineapple. whisk together the pineapple juice, lemon juice, and honey until the honey has dissolved. pour over the casserole.
  • bake in the preheated oven until hot and browned on top, about 40 minutes.

  • 1 tablespoon honey
  • 1 teaspoon dry mustard
  • 1 pinch salt
  • 1 pinch ground black pepper

  • preheat oven to 375 degrees f (190 degrees c). lightly coat an 11x7 inch baking dish with nonstick cooking spray.
  • place potatoes in a single layer in prepared dish, and top with onion. in a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
  • bake in the preheated 375 degrees f (190 degrees c) oven for 35 minutes or until tender, stirring halfway through the cooking time.
