Happy Healthy Hummus Tater

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 1
  • 1 medium potato, baked
  • 1/2 cup broccoli, steamed
  • 2 tablespoons green onions, diced
  • 2 tablespoons hummus (use your favorite flavor!)
  • 1 tablespoon mozzarella cheese
  • 1 tablespoon olive, sliced
  • salt and pepper (to taste)
  • salsa (optional)

Recipe

  • 1 heat the baked potato if necessary (either in microwave or in oven at 450 for about 15-20 minutes).
  • 2 split the baked potato and fluff insides with a fork.
  • 3 add hummus and green onions and mash with the fork until you get the consistency you'd like. season with salt and pepper.
  • 4 top with cheese, broccoli, and olives.
  • 5 serve with salsa if desired.
