Happy Healthy Hummus Tater

Ingredients

- 1 medium potato, baked
- 1/2 cup broccoli, steamed
- 2 tablespoons green onions, diced
- 2 tablespoons hummus (use your favorite flavor!)
- 1 tablespoon mozzarella cheese
- 1 tablespoon olive, sliced
- salt and pepper (to taste)
- salsa (optional)
Recipe
- 1 heat the baked potato if necessary (either in microwave or in oven at 450 for about 15-20 minutes).
- 2 split the baked potato and fluff insides with a fork.
- 3 add hummus and green onions and mash with the fork until you get the consistency you'd like. season with salt and pepper.
- 4 top with cheese, broccoli, and olives.
- 5 serve with salsa if desired.
