Roast Potatoes

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 2 kg potatoes
  • 4 tablespoons olive oil
  • 1 teaspoon mixed herbs
  • 1 teaspoon salt

Recipe

  • 1 preheat oven to 200 c / 400 f gas mark 6.
  • 2 place an oven tray into the oven.
  • 3 peel and chop potatoes
  • 4 place into slightly salted boiled water.
  • 5 boil for 5 minutes.
  • 6 drain.
  • 7 pop back into the pan.
  • 8 add the olive oil, herbs and salt.
  • 9 put the lid on the pan and shake roughly, the potatoes should be evenly coated and a little bashed.
  • 10 put onto the hot oven tray.
  • 11 pop into the oven for 40 minutes turning at least twice.
  • 12 they should be very crispy!
