Twice Cooked Baby Potatoes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 8 -10 small baby red potatoes
  • 1 -2 teaspoon olive oil
  • salt
  • pepper

Recipe

  • 1 wash potatoes.
  • 2 boil potatoes about 15 minutes or until just tender, and drain.
  • 3 coat with olive oil and let cool until cool enough to handle.
  • 4 preheat oven to 400 degrees.
  • 5 place potatoes on a large rimmed baking sheet.
