Pickaroon Potatoes

Total Time: 1 hr Preparation Time: 40 mins Cook Time: 20 mins

Ingredients

  • Servings: 6-7
  • 6 large potatoes
  • 2 tablespoons butter
  • 1/4 cup milk
  • salt and pepper
  • 1/2 cup whipping cream, whipped until stiff
  • 1/4 cup grated cheddar cheese or 1/4 cup parmesan cheese
  • 1 tablespoon hot horseradish
  • paprika

Recipe

  • peel and wash potatoes and cook in salted boiling water until tender.
  • drain and mash with the butter and milk.
  • beat until light and fluffy.
  • season with salt and pepper and fold in the horseradish.
  • pour into a buttered casserole, cover with whipped cream, sprinkle with cheese and paprika.
  • bake in a preheated 350 degree oven until brown on top.
